The Pew Research Center provides lots of reports on American demographic trends.  Reports on poverty, income inequality, and immigration may be useful for this course, although most reports are national in scope.

Think tanks are groups of experts who study problems and propose new solutions to fix those problems.  This customized search covers 1200 think tanks to see what research and reports they have made available.  This can be a useful source for statistics, understanding current legislation, and seeing some creative ideas.

This collection provides the public with access to research products produced by the Congressional Research Service (CRS) for the United States Congress. Reports are authoritative and nonpartisan.

The USDA monitors programs like WIC and SNAP and also keeps track of food insecurity.  All of these can be used as measures of poverty.  Most statistics are compiled through 2019, so you'll need to rely on newspaper articles and other current sources to update this information to reflect changes from COVID-19.
